Citrus Tofu with Onions and Peppers

Another one from my phone ap. Theirs was adapted from Bon Appetit and mine was greatly adapted from theirs because I don't have an oven.

Ingredients:
  • 1/4 cup cilantro, chopped (I could not find cilantro so I used 'hot greens')
  • 2/3 cup lime juice
  • 1/4 cup garlic, chopped
  • 3 1/2 teaspoons ground cumin, divided
  • 3/4 teaspoon smoked paprika, divided
  • salt and pepper
  • 1 block of tofu, cut into slices
  • 4 TBSP olive oil
  • 1 TBSP honey
  • 1 onion, cut into rounds
  • 2 red bell peppers, cut into slices
  • rice
Directions:
1) Mix the cilantro, lime juice, garlic and 3 teaspoons cumin, 1/2 teaspoon paprika, salt and pepper.








2) Pour half the mixture over the tofu and stir. The tofu may fall apart.








3) Toss the onion and red bell pepper with 2 TBSP olive oil, 1/2 teaspoon cumin, 1/4 teaspoon paprika and salt and pepper.






4) Saute the onion and red bell pepper. You may need to add more olive oil to keep it from burning as opposed to charring.







5) Cook the tofu in a pan.









6) Add 2 tablespoons and honey with the remaining cilantro and lime mixture and mix.
7) Serve the onion and red bell pepper with the tofu and the rice.

Vegetarian Chili


The boyfriend had never had chili until a week before I made this and asked if it was possible for me to make it vegetarian...so I did!

Taken from here with slight alterations

Ingredients:
  • 2 TBSP olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 tsp chili powder
  • 2 tsp paprika
  • 1 tsp cinnamon
  • 4 bay leaves
  • 14 oz can of diced tomatoes
  • 14 oz can of kidney beans
  • salt and pepper
Directions:
1) Heat the oil in a large pot on medium/high heat









2) Add the bell pepper, onion and carrots and saute for 5 minutes.








3) Add the chili powder, paprika, cinnamon and bay leaves and cook for another 10 minutes.








4) Add the tomatoes and cook for another 10 minutes.








5) Add the kidney beans, lower the heat, and cook for another 10 minutes.
6) Remove the bay leaves before serving.

Two Cheese Salad with Croutons


From: 101 Veggie Recipies

Ingredients:
  • 2 thick slices white bread, crusts removed
  • 1 tsp paprika
  • 2 TBSP olive oil
  • 1 garlic clove, crushed
  • 1 large cos or romaine lettuce
  • 2 ripe avocados
  • 2 TBSP lemon juice
  • 1 large courgette, cut into sticks
  • 140 g/1oz feta, crumbled into chunks
  • 25 g/ 1 oz finely grated Parmesan
  • 6 TBSP olive oil dressing
Directions:
1) Preheat the oven to 220C/Gas 7/200C fan.
2) Cut the bread into 2 cm/ 3/4 in cubes.
3) Toss with the paprika, olive oil and garlic.








4) Spread out on a baking sheet.
5) Bake for 7-8 minutes, until crisp.
6) Tear the lettuce into large pieces.







7) Peel and slice the avocados and toss with lemon juice and freshly ground black-pepper.
8) Mix the lettuce, courgette, feta, croutons with the avocados mixture.
9) Add the Parmesan and olive oil dressing.
