Crusty Potato Fingers

The ingredients sound odd, but it was great, especially with lemon juice on top.

Ingredients:
  • 2 potatoes, peeled and cut lengthways into strips
  • water
  • 1 onion, chopped
  • 1 jalapeno, chopped
  • 1/2 inch of ginger, chopped
  • salt
  • 1/2 cup flour
  • 1 TBSP corn starch or corn flour
  • crushed corn flakes
  • oil
Directions:
1)  Heat water and boil the sliced potatoes near to the point where you can puncture them with a fork.
2) Remove from the water and let drain. 
3) Mix the onion, green pepper, garlic and salt. Their directions say to a paste, but I'm not sure how to turn a onion into a paste without a blender, masher or something similar.
4) Add the flour, corn starch and 2 TBSP water.
5) Heat oil in a pan.
6) Dip the potato in the onion and flour mixture, then the corn flakes, then place in the oil.

7) Flip when it is starting to brown on one side if necessary.







8) Remove from oil and place on a paper towel to drain the oil.
9) Serve with sauces, or just lemon juice which had the perfect amount of acid.

Creamed Spinach

Not the prettyist thing I've ever made, but delicious because it's cheese and spinach. Be great for Thanksgiving.

Ingredients:
  • 2 TBSP olive oil
  • 1 clove of garlic, chopped
  • 1/2 an onion, chopped
  • 1 bag of spinach, washed
  • 1/4 stick of butter
  • 2 TBSP flour
  • 2 cups of milk
  • 1 tube of Kraft Parmesan cheese (or the equivalent)
  • salt and pepper
Directions:
1) Heat the olive oil in a pot (not a pan).
2) Add the garlic, and let cook for about 30 seconds, before it browns.
3) Add the onion until it softens.






4) Add the spinach and put the cover on the pot for about 3 minutes.
5) Remove the contents of the pot and place into a strainer or colander.
6) Add the butter until it melts.





7) Add the flour to make a roux.









8) Add the spinach mixture so the roux covers it.









9) Add the milk, Parmesan, salt and pepper.

Crepes

Missing nice breakfasts....

Ingredients:
  • 1 cup of flour
  • 2 cups of milk
  • 1 egg
  • olive oil
  • peanut butter, jelly, fruit, honey, nutella, whatever filling you like
Directions:
1) Mix the flour, milk and egg.
2) Add some olive oil to a pan and heat to medium.
3) Add 1/4 of the mixture, or enough to cover the bottom of the pan. It should be thin.









4) When it starts to bubble, flip.
5) Cook for about 1 more minute.



 6) Remove from the heat and your filling

Spicy and Peppery Tofu

This was called 'black pepper tofu' but I guess I didn't add enough pepper or because it was no fresh ground the flavor didn't come though as much. Again, it came from the app on my phone.

Ingredients:
  • 1 block of tofu, cut into cubes
  • flour to dust the tofu
  • vegetable oil
  • 6 + 8 green onions, sliced then
  • 2 red chillies, thinly sliced
  • 6 garlic cloves, crushed
  • 1 1/2 TBSP ginger, chopped
  • 2 TBSP black pepper
  • 5 TBSP soy sauce
  • 1 TBSP sugar
  • rice
Directions:
1) Toss the tofu in the flour.
2) Put enough oil in a pan to come up 1/2 a cm and heat it.
3) Shake off excess flour and fry the tofu.
4) Put the tofu on a paper towel when you remove it from the oil.
5) In another pan (or clean the first one) add 1/2 cup of oil and heat to low heat.
6) Add the 6 green onions, red chillies, garlic, and ginger.
7) Saute until the contents are soft.

8) Add the soy sauce, sugar and pepper.
9) Add the tofu and 8 green onions.
10) Serve with rice.

Potato Pakora

I've been wanting Indian food, and found this recipe on my phone. Probably should have cut the potatoes from circles into sticks, but now I know for next time! Also, I'll add more spice!

It didn't seem to matter that I used regular flour instead of chickpea flour either.

Ingredients:
  • 1 cup of flour
  • 1/2 cup of water
  • salt
  • chili powder
  • 4 cloves of garlic, chopped
  • 3 inches of ginger, chopped
  • 2 cups vegetable oil
  • 3 big potatoes, sliced thin
  • Paper towels
Directions:
1) Mix the flour and water.
2) Add the salt, pepper, garlic and ginger and mix well.
3) Heat the oil in a large frying pan.










4) Dip the potato in the flour mixture and add to the frying pan.
5) Fry until brown.






6) Remove from oil and place on paper towels to soak up excess oil.

Blueberry Muffins

Made using the blueberries from the Boston Organics box, and the flour cookbook.

Ingredients:
  • 3 1/4 cups unbleached all purpose flour
  • 1/2 tsp baking soda
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 egg yolk
  • 1 1/2 cups sugar
  • 1/2 cup plus 2 TBSP butter, melted
  • 1 cup milk, room temp
  • 1 cup creme fraiche, room temp
  • 2 tsp vanilla
  • 2 cups blueberries
Directions:
1) Position a rack in the center of the oven, and preheat to 350F/175C.
2) Butter a 12-cup muffin tin with cooking spray.
3) In a large bowl, sift together the flour, baking soda, baking powder and salt.
4) In a medium bowl, whisk together the eggs and egg yolk until thoroughly mixed.
5) Slowly whisk in sugar, butter, milk, creme fraiche and vanilla until combined.
6) Pour the butter-sguar mixture into the flour mixture and fold gently until just combined.
7) Fold in blueberries, it will be lumpy.
8) Spoon the batter into muffin tin until it is almost over flowing.
9) Bake for 30-40 minutes until browning beings on the top (unless you are using a mini muffin pan, then keep an eye on them, it is about 20 minutes though).
10) Let cool in the pan for 20 minutes.

Plum Tart

 Continuing the use of the Boston Organics box, this uses the plums. The recipe was taken from here.

Ingredients:
  • 7 TBSP chilled unsalted butter, plus more for the pan
  • 1 cup flour, plus more for the pan
  • 1/2 cup plus 2 TBSP sugar
  • 1 tsp baking powder
  • 1/4  tsp kosher salt
  • 6 tbsp milk
  • 1/2 tsp vanilla extract
  • 1 egg
  • 3 plums, pitted and cut into 16th (could use more and cut them into larger chunks, but we only had 3)
  • 1/2 tsp ground cinnamon
Directions:
1) Heat oven to 400F/205C.
2) Grease a baking dish with butter and dust with flour.








3) Whisk together flour, 2 TBSP sugar, baking powder and salt in a medium bowl.








4) Add 4 TBSP chilled butter and rub into flour mixture with your hands.








5) In another bowl, mix together withe milk, vanilla and egg.








6) Add the milk mixture to the flour mixture and mix until just combined.








7) Transfer dough to the baking dish and spread.








8) Arrange plum slices in rows on top of the dough.










9) Sprinkle the 1/2 cup sugar on top of the plums
10) Sprinkle the cinnamon on top of the plums.








11) Melt remaining butter (3 TBSP) and drizzle over the plums.







12) Bake for 30 minutes.
13) Allow to cool slightly before slicing into it.
