Ingredients:
- 4 x 20 cm (8 in) Mediterranean flatbreads (I used pitas)
- 2 TBSP sun-dried tomato paste
- 300 g (10 oz) mozzarella cheese, sliced
- 6 plum tomatoes, roughly chopped
- 4 TBSP olive oil
- 1 garlic clove, crushed
- small handful of basil leaves, roughly torn
- 100 g (3 1/2 oz) soft goats' cheese
- salt and black pepper
1) Preheat the oven to 200C/400F/Gas Mark 6
2) If using a pita, cut it in half.
3) Spread the sun dried tomato paste on the flatbreads/pitas.
4) Add slices of mozzarella cheese.
5) Cook for 6-7 minutes until the bases are crisp and the cheese has melted
6) Put the tomatoes in a bowl, with the oil, garlic, basil, salt and pepper. I used leftover basil oil from here
7) Divide the tomato mixture between the flatbreads/pitas and crumble over the goats' cheese
